TURKEY AND SUNDRIED TOMATO SCOTCH EGG

Ingredients

Makes 10. Pack two a day for a muscle-friendly snack, any time or anywhere.

1/ Free-range eggs

2/ Turkey breast mince, 600g

3/ Sundried tomatoes, 200g, chopped

4/ Salt and pepper

5/ Breadcrumbs, 150g

6/ Parsley, 1tbsp

7/ Sage, 1tbsp

8/ Thyme, 1tbsp

9/ Flour, 5tbsp


Method

Step 1 Bring a large pan of water to the boil, then reduce the heat slightly. Add 10 eggs. If you want them soft-boiled, leave them for six minutes. While they boil, mix together your mince, tomatoes and a pinch of salt and pepper. In a bowl, mix breadcrumbs with the finely chopped parsley, sage and thyme. Tip the flour into a second bowl; whisk the yolks of the last two eggs in a third bowl.

Step 2 Once the eggs have boiled, let them cool for 5-10mins, before peeling the shells off. With a pinch of flour in your hands, use the meat mixture to make 10 5mm-thick discs big enough to cover an egg. Cover each egg with the meat, then roll individually in the flour, before dipping in the yolk. Finally, roll in the breadcrumb mix.

Step 3 Heat a little oil in a pan on a medium heat. Cook your scotch eggs for 10-15 minutes, turning throughout. Once browned, let them cool and refrigerate. Take two to work each day and scoff down whenever you need a boost
